A note on quantities

A lot of my recipes don’t specify quantities for many of the ingredients — at least, often no more precision than a generous splash’. I’m sorry: it’s not how I cook (other than when baking, where quantities are essential).

As I refine these notes I’ll add quantity suggestions where I can. Where I haven’t specified quantities, use your own judgment and taste: you’re unlikely to go badly wrong, may have more fun cooking, and may well improve on the recipe.

Brits tend to measure quantities by weight, North Americans by volume. Where I have specified quantities, as a Brit living in Canada, I’ve gone for whichever makes more sense for the ingredient and the recipe.
